Understanding the high levels of variability, what is an average across, say 10 projects? And how much time can each take? Again, tons of variation variables here - no clear cut answer. But I’m generally wondering if I could eventually turn this into a sustainable income that could support my family (replace my regular day job income), or if it would be more of a side income only.

it depends entirely on your skills, its impossible to answer.
With every respect, in the overall market for a Developer thats a very low rate in UK, much of Europe and UAE the going rate for a Senior (Web) Developer would be double that, and for a web3 Developer it would be 3/4x at least.

you can use it for a year and only ever have done basics, or could only ever use remix to do small stuff.
It has the potential to be a great income, but only if you are talented and work at it – same as any programming job, or any career.
