Can we run ETH node without mining of incoming tx?
If yes then does this node will get all incoming tx on ETH?
What is the purpose of running ETH node without mining? and what are it’s benefits?

Ganache is used to run your own private blockchain, for testing purposes.
You won't be able to broadcast mainnet transactions
