Is there any way to increase the speed of transactions being included in the blockchain?
Similar to how EVM allows for paying higher Gwei to incentivize miners to prioritize transactions, is there a way to speed up the inclusion of transactions in the TON blockchain?
To my knowledge, the answer is no. Since every validator works in parallel, the way to check the transactions in TVM is based on Logical Time (LT), and there is no concept of Block Height.

Gas price is same for everyone (check the config) and you can't "pay more" to force the validator to process your transaction faster.
But if you have your own validator you can process your transactions before others

No. Validators know who should produce the next block, and only if he does not respond for some time others start creating that block.
There certainly is concept of block height.
